Steamed Barramundi Fish Head with Tau Chu

Ingredients
Fo Sauce
100 mlWater
1 tbspTau Chu (Chinese fermented soya bean paste)
1 tbspGarlic; Minced
2 tbspHua Tiao or Rice Wine
1 tbsp Oyster Sauce
1/2 tspSugar
For Fish
1/2 Barramundi Fish Head
1 tbspHua Tiao or Rice Wine
1/4 tspSalt
1/4 tspWhite Pepper
1/2 cupSpring Onions; Chopped
2 tbspPeanut Oil; Heated
Method
For Sauce

  1. In a sauce pot, mix water, Tau Chu, minced garlic, Hua Tiao or rice wine, oyster sauce, and sugar.
  2. Mix well and bring to a boil.

For Fish

  1. Marinate barramundi fish head with Hua Tiao or rice wine, salt, and white pepper for 20 minutes.
  2. Steam fish head for 8 - 10 minutes (adjust to preference).
  3. Pour sauce onto a serving plate.
  4. Add chopped spring onions on top of sauce.
  5. Remove barramundi fish head from steamer and plate on top of sauce.
  6. Finish by drizzling hot peanut oil over fish head.
