For Seasoning Sauce
20gBlack Garlic; Chopped
30gGarlic; Chopped
1/2tbspSoy Sauce
1/2tspChicken Powder
1/2tspSugar
Pepper; To taste
1tbspHua Diao Wine
1tspCooking Oil
For Garnish
20gSpring Onion; Chopped
Method
  1. Fry 10g of the garlic till crispy
  2. Mix fried garlic with the rest of the seasoning ingredients well and pour over barramundi.
  3. Steam at high heat for 8 minutes.
  4. Remove and transfer to a plate. Sprinkle with spring onions and serve.
