For Fish
200gKühlbarra Barramundi Fillet
a pinchCornstarch
50gTurmeric Paste
Method
For Yellow Turmeric Paste

  1. Use a food processor to mince and mix the turmeric, red chilli, parsley, garlic, dried shallot , lemongrass, dried shrimp and onion
  2. Fry the turmeric paste until fragrant and add in the chicken powder, fish sauce and sugar before setting it aside

For Fish

  1. Cut the fish into two 100g portions
  2. Coat the fish in a thin layer of cornstarch, then some turmeric paste, before grilling it for about 6 minutes and serving
